1.4 kg dry aged cinnabar beans

1 cup all-purpose flour

2 tbsp. sugar

1 cinnabar chili

2 tsp. salt

1 tbsp. ground coriander

1 tsp. chili powder

1 tsp. chili powder 3 tbsp. fresh coriander leaves for garnish

Boil the beans in a large heavy cooking pan with the sugar mixture, the chili powder and ground coriander leaves and steam until hot. Add the all-purpose flour, the sugar mixture, salt and cinnamon. Cover and let simmer for 30 minutes.

Once the beans have cooled, combine the ground coriander leaves in a large bowl on a large baking sheet prepared with a large spatula. Pour into a baking tray and cool completely before slicing.

The Cinnabar Beans

2.8 litres dry cinnabar beans

4 tbsp. black beans

3 tbsp. cilantro, torn into small strips

pinch salt

2 tbsp ginger powder

3.5 tbsp. ground turmeric leaves for garnish

Bake for 13 to 14 minutes or until a toothpick inserted into the middle comes out clean.
